Berries and Coconut Cream treat recipe

berries, almonds and coconut cream

This simple yet delicious treat is just what you need to pamper yourself on a nice summer afternoon!

  • Berries (strawberries, blueberries, raspberries, etc)
  • Handful almonds (roast and crush the almonds for added flavour!)
  • Handful shredded coconut (optional, adds texture and coconut-iness)
  • 1/4 cup coconut cream
  • 1/2 tsp vanilla extract

Mix berries in a bowl, throw in a handful of almonds and shredded coconut. In a separate bowl whisk half a teaspoon of vanilla extract into thick coconut cream. Pour over berries.

Now all you need is a spoon and a good book!

  1. Wow this looks superb. What coconut cream do you recommend? I’m a newbie to paleo so am trying to stock up on the right things.

    Thanks in advance!

    • Oh trust me, it’s ridiculously tasty!

I’d recommend looking up the ingredients and selecting one that has least crap added to it. A lot of prominent paleo advocates endorse Aroy-D brand coconut cream, which I opt for when it’s available, however, a lot of the time it’s not… then I tend to choose the brand that seems least tampered with.

Personally I prefer buying coconut cream in 1l cartons instead of cans, as I’m a bit paranoid on using too much canned products. Also, I use a LOT of coconut cream. If you’re in Sydney, the IGA at Paddy’s markets has several brands available in 1l sizes. Good luck!

  2. Is coconut cream meant to be used as a treat or is ok for regular use? Just due to Sat Fat content. I do train a lot and am not necessarily trying to loose weight, but it would be a benefit.

    • Based on what people far smarter than myself have written, the saturated fats in coconut cream can be very good for you – here for example is an article by Mark’s Daily Apple that discusses it from coconut oil point of view:

I guess my recommendation would be to use it in moderation – then you can get the good results without the heavy calorie content sabotaging your training results?

      • Thanks Tania :)
