Paleo Moussaka
Posted by Tanja on Oct 20, 2011 in Paleo lunch & dinner | 0 commentsLast night’s dinner was Kurt’s masterpiece: he created this divine layered paleo version of a moussaka. Ridiculously delicious!
I’m not entirely sure what he put in, but basically it’s created out of layers of mince, sweet potato, eggplant, mushrooms, zucchini and delicious tomato based sauce. The surface layer was parsnip and cauliflower put through a food processor, leek sliced thin and cherry tomatoes with olive oil sprinkled over the top.
