I’m sure many of you paleo people out there have encountered the same thing: when discussing food, the first reaction from everyone is ‘But what about bread? I don’t know what I’d do without bread…‘ or ‘What do you have for lunch if you can’t have sandwiches?‘
Well, who needs bread when you can have paleo ‘sandwiches’?
Here’s how: just wrap a slice of cold meat around all the goodies you’d normally stuff in a sandwich, and then wrap the package in a lettuce leaf or two and voila!
Not only is this ridiculously delicious, it’s so guilt free and healthy that you can eat as many as you like!
Recipe:
Ingredients:
- lettuce leafs, preferably large ones
- thin slices of cut meat, preferably long ones
- avocado
- tomato
- cucumber
- red onion
- salt & pepper to season
Instructions:
Prepare ingredients by washing and drying lettuce, tomato and cucumber well & slicing tomato, cucumber and red onion thinly.
Lay a slice of chosen cold meat on a cutting board. Smear avocado in a line along the short end of the meat (as if you were filling a fajita or sushi). Lay all fillings evenly on the avocado and season with salt and pepper.
Roll the slice of meat neatly around the fillings, and wrap a lettuce leaf around the fillings roll.
Serve with your favourite paleo sides, for example raw carrot batons and sliced apple like in the picture.
