Bacon and no-potato salad recipe

  I love a good mayo based side salad (blame on the Scandinavian heritage!) and potato salad especially has always been among my favourites. I trialled out Everyday Paleo’s No-potato salad recipe with some tweaks and the result was a raging success – in fact, the man declared it the best potato salad he’s ever had!   Ingredients: 1/4 – 1 cup of homemade paleo mayo* 1/2 cauliflower, steamed in florets and crumbled 3 boiled eggs, cut small 1/2 red onion, minced 2 cloves garlic, minced 150g bacon, grilled crispy and chopped small lots of gherkins 1 tsp Dijon mustard black pepper   Instructions: Boil the eggs (10 mins), steam the cauliflower in florets (8 mins) and grill the bacon to start with. Cool the boiled eggs in cold water and rinse the cauliflower in cold water to cool them down. Mince the red onion and garlic and mix them with homemade paleo mayo* (view recipe here) in a smaller bowl. Add in chopped gherkins, Dijon mustard, black pepper and mix well. Crumble cauliflower into a big bowl. Add in chopped eggs and bacon. Pour in the mayo mix and mix the whole lot well. Serve as a side for a good steak or just eat as such – absolutely delicious! (* I used the whole batch of homemade mayo, but if you don’t like your salad quite so mayo heavy, start with less and keep adding until you reach the desired consistency)  ...

Need a perfect side to go with a beautiful free-range pork chop? This cooked red cabbage is another of our comfort food favourites. Recipe: Ingredients: 1/2 red cabbage, cored and sliced fine 2 green apples, peeled, cored and grated 1 onion, sliced thin 3 tbsp olive oil 1/2 cup organic vegetable stock 2 bay leaves 1 tbsp Cherry Vinegar salt & pepper to taste   Instructions: Heat olive oil in a pan and sauté onions for 5 minutes. Add in cabbage, vegetable stock, bay leaves, cherry vinegar, salt and pepper; stir well and bring to boil. Cover with a lid and turn down heat. Let cook for 20 minutes. Add in apple, stir well and cover to let cook for further 5 minutes. Serve with pork chops and carrots.   Recipe adapted from Nom Nom Paleo....

Comfort food recipe: cauliflower mash

Just because you’ve decided to go paleo doesn’t mean you can’t enjoy comfort food on a cold winter night! Instead of potato mash, why not trying to make some delicious cauliflower mash to ramp up the comforting level of your usual steak and salad? Recipe: Ingredients: 1/2 cauliflower, cut up and steamed very soft 1 tbsp olive oil/lard/etc salt white pepper 3-4 cloves of garlic, very finely minced   Instructions: Wash and cut cauliflower into florets and steam until soft. Don’t worry about over-steaming the cauliflower as plenty of moisture is going to make the mashing easier and the end result creamier. Once steamed, measure in other ingredients and mash until smooth and creamy. Serve with pretty much anything – delicious, healthy and so very comforting on a cold winter night! Tip: Cauliflower also works as a rice alternative for curries.  Steam until al-dente. Don’t add any additional ingredients and instead of mashing into a creamy mash, just use a fork to achieve a rougher texture.  ...
