Recipe for paleo Apple & Cinnamon Cookies

 

Even Grok had a sweet tooth.

The best way to stop you from snacking on processed snacks loaded with sugar and other nasties, is to stock up on home-baked healthy alternatives!

Recipe:

Makes roughly two dozen cookies

 

Ingredients:

  • 3 large apples, peeled, and grated
  • 1 cup almonds
  • 1 cup macadamia nuts
  • 2 teaspoons coconut oil, melted
  • 2 teaspoons vanilla extract
  • 1 tablespoon of cinnamon
  • 1 cup finely shredded unsweetened coconut
  • A pinch of  salt
  • 3 large eggs, lightly beaten

 

Instructions:

Pre-heat oven to 175c (350f).

Peel & grate apples into a bowl. Process almonds and macadamia nuts into a rough crumble, add into the bowl.

Add all remaining ingredients and mix well.

Shape into cookies on baking paper (I used egg rings to get them even) and bake for 25-30 minutes – or until edges begin to turn brown.

Let cool off for 10 minutes and enjoy!

  2. Hi Robin- could I substitute 1-2 of the eggs for just egg whites- would it still work do you think?

  3. What did I do wrong…. They were soggy. Should the juice of the apples be squeezed out ?

    • Oh my… I’ve made them a dozen times and never have they turned out soggy… Did you cook them hot enough and long enough? That’s really quite odd… I’ve never removed the juice or anything and in fact they’ve always been quite dry if anything.

      So sorry to hear they didn’t turn out right the first time – maybe try cooking them a tad longer next time?

  5. These worked out great – not soggy at all. Not sweet enough for the kids but that just probably means I need to cut more sugar out of their diet. Very filling though. Thanks for the recipe :)
