Seafood is always a treat and these whitebait crisps will make a fabulous entree for a dinner party or a delicious snack when you want to treat yourself to something special. Serve them with paleo mayo and it’s a sure hit!
- 200g Australian whitebait
- 1 tsp arrowroot flour
- 1/4 cup coconut flour
- 1 tbsp almond meal
- chilli powder, salt & pepper to taste
- coconut oil
Rinse whitebait and pat dry.
Mix all ingredients in a bag and toss whitebait in the flour mix until evenly coated.
Heat 3-4mm of oil in a pan until very hot. Shallow fry whitebait until crispy.
Transfer onto a few sheets of kitchen towels to drain the excess oil.
Serve immediately with paleo mayo.
