Recipe for Scallops in Red Curry Sauce

This lovely red curry dish makes for a fantastic entree or a small delicious dinner for two. Using a readymade curry paste, this dish is very quick to prepare, yet sure to impress any dinner guests!
Ingredients:
Makes either two small mains or three entrée size dishes. If you want to make a substantial dinner, please double the recipe!
- 200g scallops
- 1 tbsp coconut oil
- 1/2 tin Maesri red curry paste*
- 1/3 cup coconut cream
- 1/2-1 tbsp lime juice
- chilli, coriander and shallots to garnish
Instructions:
Heat oil in a pan and add curry paste. Heat through.
Add scallops and stir for 2 minutes until paste is thoroughly mixed through the scallop meat.
Add coconut cream. Bring to the boil and allow to simmer for 2 minutes.
Add lime juice, garnish with shallots, coriander, chilli and serve immediately.
* Maesri paste is quite easy to find, for example Woollies stocks it.
Ingredients: Dried red chilli, garlic, shallot, salt, lemon grass, sugar, galangal, kaffir lime peel and spices. No preservatives or color added. Product of Thailand.
